Asparagus Crepes

1 recipe Basic Dinner Crepes prepared with 1/2

teaspoon lemon juice

Sauce

2 garlic cloves -- quartered

1/2 cup unsweetened soy milk

9 1/2 ounces silken tofu

1 tablespoon tamari soy sauce

2 tablespoons lemon juice

Filling

16 ounces asparagus

 

While the crepes bake, prepare the sauce and filling: Place the garlic in a

food processor with the S blade inserted. Mince. Add the soy milk and tofu.

Puree until smooth. Pour into a saucepan and heat.

 

Steam the asparagus until the color brightens and the spears are crisp. Fold

the crepes over the asparagus.

 

Remove the sauce from the heat. Stir in the tamari and lemon juice. Taste. If

neede, add more tamari or lemon juice. Spoon the sauce over the filled crepes.

Serve.
