Guest guest Posted November 20, 2000 Report Share Posted November 20, 2000 * Exported from MasterCook * Cranberry Wild Rice Recipe By : Nutrition Action Healthletter, 9/2000 Serving Size : 10 Preparation Time :0:00 Categories : Fruits Grains And Cereals Rice Side Dishes Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 cup fresh or frozen cranberries 1/2 cup brown sugar 1/4 cup sliced almonds 2 cups cooked wild rice (about 1/2 cup raw rice) 1 cup cooked brown rice (about 1/4 cup raw rice) 1/2 cup sliced celery 1/3 cup fresh orange juice 2 tablespoons red wine vinegar 1 teaspoon grated orange peel Adapted from Vegetarian Times Low-Fat & Fast (1997, Macmillan). In a medium non-stick skillet, cook the cranberries, sugar, and almonds over medium heat, stirring constantly until the sugar melts and coats the cranberries and almonds, about 6 minutes. Stir in the remaining ingredients. Cook until heated through, about 5 minutes, stirring frequently. Serves 10.
