Cran-Walnut Spice Bread

1 1/4 cups flour

1 1/2 teaspoons ground cinnamon

1 teaspoon ground allspice

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 1/2 cups peeled and diced tart apples

1/2 cup chopped dried cranberries

1/4 cup bran cereal

1/4 cup chopped toasted walnuts

3/4 cup low-fat buttermilk

1/3 cup maple syrup

1/4 cup oil

1 egg

 

Makes 1 loaf.

 

A variation on the theme are these two fragrant fruit breads, one made with

fresh pears and cinnamon, the other with cranberries and walnuts.

 

Preheat oven to 400 degrees. In a large bowl, combine flour, cinnamon,

allspice, baking powder, baking soda and salt. Add apples, cranberries,

cereal and walnuts, and toss to coat.

 

In another bowl, whisk together buttermilk, maple syrup, oil and

egg. Combine contents of both bowls, folding until just

incorporated. Spoon batter into oiled and floured 2-quart loaf pan.

 

Bake for 25 minutes, then lower heat to 300 degrees and bake about 15

minutes more, until wood pick inserted in center of loaf comes out clean.

Protein 3 g, Fat 7 g, including sat. fat 1 g, Cholesterol 18 mg, Sodium

230 mg, Calcium 61 mg, Dietary fiber 2 g, Diabetic exchanges per serving:
