Guest guest Posted November 19, 2000 Report Share Posted November 19, 2000 This weeks Healthful Cooking column featured fruit breads made with buttermilk, thus using less fat. * Exported from MasterCook * New Millennium Pumpkin Bread Recipe By : Healthful Cooking, Mary Carroll, Star Tribune 11/16/00 Serving Size : 12 Preparation Time :0:00 Categories : Breads, Quick Fruits Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 1/4 cups flour 1 1/2 teaspoons ground cinnamon 1 teaspoon pumpkin pie spice 1 teaspoon baking powder 1/2 teaspoon ground nutmeg 1/2 teaspoon baking soda 1/2 teaspoon salt 1/2 cup chopped pitted dates 1/2 cup low-fat bran or other flake cereal 3/4 cup low-fat buttermilk 1/2 cup pumpkin puree 1/3 cup real maple syrup 1/4 cup oil 1 egg 1/4 cup raisins Makes 1 loaf. Preheat oven to 375 degrees. In a large bowl, combine flour, cinnamon, pumpkin pie spice, baking powder, nutmeg, baking soda and salt. Add dates and cereal, and toss to coat. In another bowl, whisk together buttermilk, pumpkin puree, maple syrup, oil and egg. Stir in raisins. Combine contents of both bowls, folding until just incorporated. Spoon batter into oiled and floured 2-quart loaf pan. Bake for 25 minutes, then lower heat to 300 degrees and bake about 15 minutes more, until toothpick inserted in center of loaf comes out clean.
