Whole Wheat Pear-Spice Bread

Amount Measure Ingredient -- Preparation Method

1 1/4 cups whole wheat pastry flour

1 1/2 teaspoons ground cinnamon

1 teaspoon ground allspice

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 1/2 cups peeled and diced Bosc pears

1/2 cup chopped dried apricots or dried cherries

1/2 cup bran cereal

3/4 cup low-fat buttermilk

1/3 cup apple juice concentrate -- thawed

1/4 cup oil

1 egg

 

Makes 1 loaf.

 

Preheat oven to 400 degrees. In a large bowl, combine flour, cinnamon,

allspice, baking powder, baking soda and salt. Add pears, dried fruit and

cereal, and toss to coat.

 

In another bowl, whisk together buttermilk, apple juice concentrate, oil

and egg. Combine contents of both bowls, folding until just

incorporated. Spoon batter into oiled and floured 2-quart loaf pan.

 

Bake for 25 minutes, then lower heat to 300 degrees and bake about 15

minutes more, until toothpick inserted in center of loaf comes out clean.

Protein 4 g, Fat 6 g, including sat. fat 1 g, Cholesterol 18 mg, Sodium

250 mg, Calcium 60 mg, Dietary fiber 4 g, Diabetic exchanges per serving:

1/2 fruit exch., 1 bread/ starch exch., and 1 fat exch.
