Great Smokey Mountain Green Beans

3 pounds fresh string beans -- to 4

1/2 teaspoon dry mustard

2 teaspoons toasted sesame oil -- to 3 tsp

2 cloves garlic

1 tablespoon dark miso

1 umeboshi plums -- optional

- to 2 plums

To string the beans, snap off one end with your finger and pull it

down the length of the bean. Do this to both ends. now you won't have

any tough strings when you eat the beans.

 

Rinse the beans well, put into a large pot, and cover with water.

Bring to a boil and let cook a few minutes. Turn down the heat and

simmer for about 4 hours or so. As they finish cooking, the beans

should be dark green. At the end of the cooking time, dip out some of

the hot water into a cup, dissolve the miso into it, and stir into

the beans. When you serve them, put several slices of tomato and raw

onion on top, and slice into the beans. Eat this all together. This

is truly delicious. Don't worry about overcooking these; they can

cook for 5 or 6 hours and keep getting better and better.

NOTES : I will never forget the first time I had green beans after I

left home.I was having dinner with my older cousin from New York. She

put a big helping of beans on my plate and passed it to me.

 

" Excuse me " , I said. " My beans haven't been cooked yet. " I handed my

plate back to her.

 

" What do you mean, I just took them off the stove myself. "

 

" Well, they are warm, " I said, " but they're still crunchy. "

 

 

" Of course they're crunchy " , she said horrified. " You don't want to

overcook them. "

 

It was then that it dawned on me how the rest of the world ate green

beans What? Cooked less than three hours? No ham bone? Still crunchy?

 

I've never had beens cooked exactly like this recipe (not even in

other parts of the South). Here is the recipe I have come up with,

sans ham bone.

1/4 cup tamari soy sauce -- mixed with

1/4 cup water

2 teaspoons dry mustard

2 teaspoons Pick-a-Peppa Sauce

1 clove garlic -- to 2

2 teaspoons toasted sesame oil

1 pound firm tofu

2 cups blackeyed peas -- to 3

- washed and picked through

1 white onions -- chopped

2 teaspoons ketchup -- optional

1/2 teaspoon dried savory

1 teaspoon salt

 

8-10 servings

 

Make a vegetarian " fatback " by stirring together the tamari, mustard,

Pick-a-Peppa, garlic, and toasted sesame oil to make a marinade. Cut

the tofu into chunks, and toss gently with the marinade. The longer

this soaks, the better it is, but if you don't have much time, about

an hour should do it.

 

Put the black-eyed peas in a pot with enough water to cover them,

bring to a boil, and add the onion, ketchup, and savory. Turn down

the heat and let simmer for about 45 minutes. When the peas are half

done, add the tofu and the rest of the marinade, the salt and pepper.

Continue simmering and stir gently until the peas are soft. Serve

this with hushpuppies or cornbread, collard greens, and boiled

potatoes for good luck on New Year's Day.

NOTES : I was brought up to believe that a pot of beans was simply

not edible if it didn't have some type of meat cooked with it. I

fiddled around until I came up with something that brings out the

taste of the beans just like I remember. If you can't find

Pick-a-Peppa sauce in your store, you may substitute vegetarian

Worcestershire, A-1 sauce, White Tiger Sauce, or Perkin's Steak

Sauce, but Pick-a-Peppa works best. Look for parrots on the label.
