Guest guest Posted November 18, 2000 Report Share Posted November 18, 2000 * Exported from MasterCook * Tomato-Onion Relish Recipe By : Vegetarian Cooking for Everyone, Deborah Madison, page 79 Serving Size : 1 Preparation Time :0:00 Categories : Side Dishes Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 small red onion finely and neatly diced 2 ripe tomatoes -1 red and 1 yellow 1 tablespoon chopped parsley or basil Several pinches red pepper flakes OR 1 serrano chile -- minced, optional Vinegar to taste Salt and freshly milled pepper Makes about 1 cup. Spoon over grilled vegetables, grilled polenta, or garlic croutons. Refrigerating the onion reduces its pungency and makes it crisp and cold. Best used within the day. Put the onion in a bowl with cold water and a few ice cubes to cover. Refrigerate for at least 30 minutes, then drain. Meanwhile, halve, seed, and finely dice the tomatoes, reserving the inner core for another use. Combine the onion, tomatoes, parsley, and red pepper flakes in a bowl. Season to taste with a vinegar that you like-sherry, balsamic, apple cider-a pinch salt, and pepper.
