Guest guest Posted November 18, 2000 Report Share Posted November 18, 2000 * Exported from MasterCook * Pan Roasted Vegetaables in Oven Recipe By : Serving Size : 0 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 pound vegetables (broccoli, carrots, potatoes...) -- cut into small chunks splashes of olive oil 1/2 cup vegetable broth (1 cup broth may be added if you have a lot of veggies but less broth is better than too much broth) 1 teaspoon garlic -- chopped 1 9X13 baking pan or larger (veggies need to be laid out in one layer) other herbs may be added In the past, I'd toss my veggies with olive oil and pan roast them at 400 F, checking after 20 mins., but they were never as good as I've had in restaurants. Then I decided to check out other recipes to see what they did that I wasn't doing. Then I saw one that called for garlic and veg broth, used them and knew that these were the answer to my problem. Memories of the best oven roasted veg I've ever have can now be recreated in my very oven. Even my kids love these veggies. I'd like to suggest that the next time you make your favorite pan oven roasted vegetables that you add the broth and garlic and see if they don't make a difference! One night this week I was in a rush to do several things at once and my daughter volunteered to make dinner (this won't happen again for another leap year). She made the oven roasted veg with canola oil and they were, in a word, lifeless. I rescued them by splashing on some olive oil, which helped, but it was too late for the broth as they had been cooked to a crisp. Toss veggies with garlic and broth. Splash on a little oil. Stir to re-moisted after every 10 minutes. Bake uncovered at 400 F. Check after 20 minutes. Some veggies cook faster than others. Veggie mixtures taste best. This recipe leaves no leftovers. The kids stand by the pan and munch while they a) talk about their day, b) complain about the rest of the vegan dinner. My son wants m**t and my daughter wants vegan with zero fat grams. My husband just wants dinner the minute he gets home.
