Guest guest Posted November 18, 2000 Report Share Posted November 18, 2000 * Exported from MasterCook * Gingered Cranberry Sauce Recipe By : Vegetarian Cooking for Everyone, Deborah Madison, page 80 Serving Size : 1 Preparation Time :0:00 Categories : Fruits Sauces And Marinades Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 12 ounces bagged cranberries 3/4 cup sugar 1 2 inch knob ginger -- peeled and thinly sliced into rounds 4 cloves Grated zest of 2 oranges Makes about 2 1/2 cups The traditional sauce for the holidays, spiked with ginger and clove. This can be made several days in advance. Sort through the cranberries, removing any that are mushy, then rinse them well. Combine the remaining ingredients plus 3/4 cup water in a large saucepan and bring to a boil. Add the cranberries and cook over medium heat until they begin to pop. They needn't all pop it's nice to have a lot of them whole. Remove from the heat, cool to room temperature, then refrigerate.
