Guest guest Posted November 18, 2000 Report Share Posted November 18, 2000 * Exported from MasterCook * Cherry Tomato And Olive Relish Recipe By : Vegetarian Cooking for Everyone, Deborah Madison, page 78 Serving Size : 1 Preparation Time :0:00 Categories : Sauces And Marinades Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 pint cherry tomatoes halved or quartered if large 1 yellow tomato -- (1 to 2) seeded and finely diced 24 Nicoise olives -- pitted and halved 1 tablespoon capers -- rinsed 1 tablespoon chopped parsley 2 teaspoons chopped marjoram 5 basil leaves -- thinly sliced 1 tablespoon extra virgin olive oil Fresh lemon juice -- to taste Salt and freshly milled pepper Makes about 2 1/2 cups Only the sweetest, most flavorful tomatoes work in this relish. Use it to accompany mashed potato cakes, grilled polenta or spooned over Skillet Cheese. Put the tomatoes in a bowl with the olives, capers, and herbs. Moisten with the olive oil, then season to taste with lemon juice, salt, and pepper.
