Guest guest Posted November 16, 2000 Report Share Posted November 16, 2000 * Exported from MasterCook II * Mushroom Bruschetta Recipe By : Quick After Work Vegetarian Cookbook Serving Size : 4 Preparation Time :0:00 Categories : Italian Sandwiches Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 cloves garlic -- peeled & crushed 6 tablespoons extra virgin olive oil 8 large fresh mushrooms salt and pepper -- to taste 1/4 cup white wine 1 Italian ciabatta loaf, halved lengthwise and crosswise 2 tomatoes, peeled, seeded & chopped 2 tablespoons chopped fresh parsley 2 tablespoons chopped fresh green onion 1. Preheat broiler. Mix garlic and olive oil and use 3-4 Tbs to brush the underside of the mushrooms. Sprinkle mushrooms with salt and place on a broiler pan. Sprinkle with white wine and broil 4-5 minutes until cooked through. 2. Meanwhile, brush remaining garlic oil over the bread. 3. Toast the bread. Arrange mushrooms on toasted bread. 4. Mix tomatoes, parsley, onion, more salt and pepper. Sprinkle over mushrooms. Place under the broiler for 1-2 minutes. Serve at once.
