Mushroom Bruschetta

Amount Measure Ingredient -- Preparation Method

2 cloves garlic -- peeled & crushed

6 tablespoons extra virgin olive oil

8 large fresh mushrooms

salt and pepper -- to taste

1/4 cup white wine

1 Italian ciabatta loaf, halved lengthwise

and crosswise

2 tomatoes, peeled, seeded & chopped

2 tablespoons chopped fresh parsley

2 tablespoons chopped fresh green onion

 

1. Preheat broiler. Mix garlic and olive oil and use 3-4 Tbs to brush

the underside of the mushrooms. Sprinkle mushrooms with salt and

place on a broiler pan. Sprinkle with white wine and broil 4-5

minutes until cooked through.

 

2. Meanwhile, brush remaining garlic oil over the bread.

 

3. Toast the bread. Arrange mushrooms on toasted bread.

 

4. Mix tomatoes, parsley, onion, more salt and pepper. Sprinkle over

mushrooms. Place under the broiler for 1-2 minutes. Serve at once.

NOTES : With the popularity of Mediterranean-style food, chefs and

cooks have felt free to add all kinds of different toppings to

Italian bread to make creative variations of bruschetta. Here is one

of my favorites.
