Guest guest Posted November 17, 2000 Report Share Posted November 17, 2000 * Exported from MasterCook * Crustless Mushroom Quiche Recipe By :Estrogen, The Natural Way - Nina Shandler Serving Size : 6 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- canola oil spray 1 onion -- chopped 3 cups sliced fresh mushrooms 5 garlic cloves -- quartered 4 1/8 x 1-inch slices fresh ginger 24 ounces extra-firm tofu 1/4 teaspoon turmeric 2 teaspoons ground cumin 2 tablespoons tamari soy sauce Preheat the oven to 350F. Spray a heavy fring pan with canola oil. Saute the onion and mushrooms until browned. While the vegetables saute, prepare the quiche mixture: Place the garlic in a food proccessor with the S blade inserted. Mince. Break the tofu into small pieces and place in the food processor. Add the remaining ingredients. Process for at least 3 minutes, until smooth. Taste. If needed, add more cumin. Turn the mixture into a bowl. Add the sauteed onion and mushrooms. Mix until thorougly distributed. Turn into a 9-inch nonstick or oiled pie plate. Bake for 50 minutes, until set. Unmold. Allow to cool for 5 minutes before serving. Description: " The top resembles parched earth-not very attractive. Treat it like a loaf to make it more presentable: Take it out of the oven, cover it with a dinner plate, turn it over, and remove the pie plate.
