Guest guest Posted November 17, 2000 Report Share Posted November 17, 2000 * Exported from MasterCook * Tofu with Shiitake Mushrooms and Greens Recipe By :Estrogen, The Natural Way - Nina Shandler Serving Size : 4 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 cup dried shiitake mushrooms 3 cloves garlic -- minced 1 tablespoon grated fresh ginger 2 tablespoons tamari soy sauce 1 tablespoon cornstarch 16 ounces soft tofu -- cut into 2-inch squares (1/2 inch thick) 3 cups (4 oz) young, tender watercress 3 cups (4 oz) arugula 3 cups pea greens or spinach Place the mushrooms in a bowl. Cover with warm water. Allow to soak for 2 hours until the mushrooms are rehydrated. Squeeze the water out of the mushrooms and set aside. Reserve the soaking water. Measure 1 cup of the soaking water into a frying pan. Add the mushrooms, garlic, and ginger. Cook over medium-high heat. Dissolve the tamari and cornstarch in 2 tablespoons water. When the liquid begins to simmer, stir in the dissolved tamari and cornstarch. Stir while the sauce thickens. Add the tofu. Reduce the heat to low. Steam the greens in a steamer over 2 cups of water for 5 minutes or until tender. Add the steamed greens to the tofu in brown sauce. Remove from the heat and serve.
