Family-Style Tofu

24 ounces firm tofu

canola oil spray

2 onions -- sliced

2 carrots -- sliced

6 garlic cloves -- chopped

8 1/8 x 1-inch slices fresh ginger

2 tablespoons tamari soy sauce

1 tablespoon cornstarch

 

Preheat the oven to 500F.

 

Cut the tofu into triangles: First cut the whole cake in half, making two

rectangles. Cut the three halves (1 1/2 cakes) into triangles by cutting them

from corner to corner. Slice each triangle twice, making eighteen triangles

about 1/2 inch thick. Arrange on a broiler pan. Spray with oil. Turn over and

spray again. Place in the oven. Roast until lightly golden on the undersides,

5 to 10 minutes. Turn over. Roast until the bottoms are golden, another 5 to

10 minutes.

 

While the tofu roasts, prepare the vegetables and sauce: Spray a frying pan

with oil and heat over medium-high heat. Add the onion, carrot, garlic, and

ginger. Saute until the onion is browned and the carrot can be easily pierced

with a fork. Increase the heat to high. Add the tamari and 3/4 cup of water.

In a small bowl, disssolve the cornstarch in 2 tablespoons of water. Stir in.

Continue stirring until the sauce thickens. Remove from the heat. Add the

roasted tofu. Mix until the tofu is thoroughly coated.
