Garden Fattoush

Amount Measure Ingredient -- Preparation Method

2 tablespoons olive oil

1 medium red onion -- diced

2 cups diced pita bread -- day-old is fine

2 medium tomatoes -- diced

1 cucumber -- peeled & chopped

1/4 cup chopped fresh parsley

juice of 1 large lemon

1/2 teaspoon black pepper

1/2 teaspoon salt

 

In a large skillet, heat the oil over medium heat. Add the onion and cook,

stirring, for 4 minutes. Add the bread and cook, stirring, for 5-7 minutes.

Transfer to a salad bowl and toss with the tomatoes, cucumber, parsley, lemon

juice, pepper, and salt.

 

Spoon the salad onto plates and serve at once.

" This Middle Eastern " bread salad " is a resourceful way to use

leftover pita bread. "
