Add the onion and cook, stirring, for 4 minutes. Add the bread and cook, stirring, for 5-7 minutes. Transfer to a salad bowl and toss with the tomatoes, cucumber, parsley, lemon juice, pepper, and salt. Spoon the salad onto plates and serve at once.
