My husband loves the Better Butter from Laurel's kitchen, but I think I'll

try this one next when it's finished up.

Easy Veggie Butter

Amount Measure Ingredient -- Preparation Method

3/4 c soft tofu

2 tbsps olive oil -- or flax oil

1 pinch salt

1 dash turmeric

 

In a blender or food processor, blend together all the ingredients until

well mixed. Store in sealable container. Will keep in the fridge for 4-7

days. Makes approx. 1 cup.
