Guest guest Posted November 15, 2000 Report Share Posted November 15, 2000 * Exported from MasterCook * Sweet-and-Sour Balls Recipe By :Estrogen, The Natural Way - Nina Shandler Serving Size : 4 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- Sweet-and-Sour Balls 2 tablespoons peanut butter 2 tablespoons tamari soy sauce 6 garlic cloves -- pressed 2 tablespoons dried cilantro 1/2 cup finely chopped water chestnuts 1/2 cup finely chopped green onions 32 ounces frozen firm tofu -- thawed canola oil spray Sweet-and-Sour Sauce 4 garlic cloves -- pressed 1 cup frozen apple juice concentrate 2 tablespoons cornstarch 2 tablespoons apple cider vinegar 1 1/2 tablespoons tamari soy sauce Preheat the oven to 500F. To make the balls, cream the peanut butter and tamari in a mixing bowl. Add the garlic, cilantro, water chestnuts, and scallions. Place the tofu between two plates. Press down on the top plate and pour off any water. Crumble the tofu into the bowl. Mash the ingredients until they are thoroughly combined into a meatball-like mixture. Form into balls. Spray each ball lightly with oil. Place on a cookie sheet. Bake for 15 minutes, until the balls are lightly crusty. While the sweet-and-sour balls cook, prepare the sauce: Place the garlic and apple juice concentrate in a heavy-bottomed saucepan. Place over medium-high heat. Dissolve the cornstarch in the vinegar and tamari. When the apple juice concentrate begins to boil, whisk in the dissolved cornstarch mixture. Stir continually until the sauce is thickened and translucent. Remove from the heat. Pour the sauce over the balls and coat them evenly just before serving.
