Creamed Corn

2 garlic cloves -- quartered

1/4 onion -- quartered

19 ounces silken tofu

2 pinches turmeric

1 tablespoon frozen white grape juice concentrate

salt

1 pound fresh corn kernels or frozen corn, thawed

 

Place the garlic in a food processor with the S blade inserted. Mince. Add the

onion. Chop. Add the tofu, turmeric, and juice concentrate. Process until

smooth. Salt to taste.

 

Add the corn. Pulse until about half the kernels are chopped and half remain

whole. Pour into a saucepan. Heat. Serve.
