Alternate grating half a potato and half an onion, using the grating blade of a food processor. (By alternating the potato and onion, the onion juice keeps the potato from discoloring.) Remove from the food processor and place in a mixing bowl. Place the tofu in the food processor with the S blade inserted. Process until smooth. Add to the potato-and-oniom mixture, and fold in. Add salt and pepper to taste. Form pancakes by taking large spoonfuls of the mixture, placing them on a cookie sheet, and flattening them. Spray the latkes with oil. Turn the latkes over and spray the other sides with oil. Bake for aboout 5 minutes, until the undersides are lightly browned. Turn the latkes over and bake them until the bottoms are browned and the latkes are crisp. - - - - - - - - - - - - - - - - - - - Per serving: 128 Calories (kcal); trace Total Fat; (1% calories from fat); 3g Protein; 29g Carbohydrate; 0mg Cholesterol; 10mg Sodium Food Exchanges: 1 1/2 Grain(Starch); 0 Lean Meat; 1 Vegetable; 0 Fruit; 0 Fat; 0 Other Carbohydrates Nutr.
