Potato Latkes

4 large potatoes

3 medium onions

16 ounces soft tofu

salt and pepper

spray oil

 

Preheat the oven to 500F.

 

Alternate grating half a potato and half an onion, using the grating blade of a

food processor. (By alternating the potato and onion, the onion juice keeps the

potato from discoloring.) Remove from the food processor and place in a mixing

bowl.

 

Place the tofu in the food processor with the S blade inserted. Process until

smooth. Add to the potato-and-oniom mixture, and fold in. Add salt and pepper

to taste.

 

Form pancakes by taking large spoonfuls of the mixture, placing them on a cookie

sheet, and flattening them. Spray the latkes with oil. Turn the latkes over

and spray the other sides with oil.

 

Bake for aboout 5 minutes, until the undersides are lightly browned. Turn the

latkes over and bake them until the bottoms are browned and the latkes are

crisp.
