Hoisin Sauce with Chili Paste and Tangerine Zest

Amount Measure Ingredient -- Preparation Method

3 tablespoons dark soy sauce

2 tablespoons dark sesame oil

1 tablespoon hoisin sauce

2 teaspoons Lan Chi Chilli Paste with Garlic

1 tablespoon sugar

2 teaspoons finely chopped tangerine or orange zest

1 tablespoon minced ginger

2 tablespoons chopped cilantro

 

Makes about 1/2 cup.

 

Stir all the ingredients together in a bowl. Taste and adjust the

seasoning if necessary.

Peanut Soy Sauce with Ginger and Scallions

Amount Measure Ingredient -- Preparation Method

2 tablespoons soy sauce

1 teaspoon minced ginger

1 tablespoon chopped scallion

- white part only

1 tablespoon roasted peanut oil

 

Makes about 1/4 cup.

 

Combine the soy sauce, ginger, and scallion in a small bowl. Heat the

oil in a small skillet over medium heat until hot but not smoking

then whisk it into the soy sauce mixture.

Rice Wine Vinegar with Garlic

1/2 cup rice wine vinegar

1 small garlic clove -- slivered

 

Makes about 1/2 cup.

 

Combine the vinegar and garlic and let stand for at least 15 minutes

before using.
