These sound like an easy way to add a Thai taste. I love Thai food,

but don't usually have all the necessary ingredients on hand.

Peanut Tofu Sauce

Amount Measure Ingredient -- Preparation Method

-------- ------------ --------------------------------

1 clove garlic -- minced

- to 2 cloves

1 tablespoon chopped shallot or scallion

1/4 cup unsweetened peanut butter

5 ounces silken tofu

1 teaspoon Lan Chi Chilli Paste with Soybean

- or 1 serrano chile -- minced

1/2 teaspoon salt or tamari -- to taste

 

Makes about 1 cup.

 

In a food processor or blender, puree all the ingredients with enough

water to loosen the mixture. Taste for salt and season as needed.

Quick Peanut Sauce

Amount Measure Ingredient -- Preparation Method

3 tablespoons unsweetened peanut butter

2 tablespoons rice wine vinegar

1 tablespoon chopped cilantro

1 clove garlic -- minced

2 teaspoons soy sauce -- to taste

1 teaspoon light brown sugar

1/2 teaspoon chile oil

salt

 

Makes about 1/2 cup

 

Combine all the ingredients except the salt, adding 2 to 4

tablespoons warm water to make it the consistency you wish. Add 1/4

tsp salt and then taste.

Golden Tofu and brown rice.

Thai Peanut Sauce

Amount Measure Ingredient -- Preparation Method

3 tablespoons Thai peanut paste

1 teaspoon Thai red chili paste

1 cup unsweetened coconut milk

1 scallion including 1/2 the greens -- thinly sliced

 

Makes about 1 cup.

 

Work the peanut and red chili pastes into the coconut milk until

smooth, then heat in a small saucepan until boiling. Turn off the

heat and stir in the scallions. Taste and increase the heat if you

like by adding more chili paste.
