Creamed Potatoes

4 potatoes -- peeled and sliced thin

spray oil

1 large onion -- sliced thin

3 garlic cloves -- quartered

1/4 cup fresh parsley

1 tablespoon powdered vegetable soup stock

1/4 teaspoon black pepper

1/2 cup unsweetened soy milk

19 ounces silken tofu

 

Place the potatoes in a cooking pot. Cover with water. Bring to a boil.

Simmer until fully cooked. Drain.

 

While the potatoes cook, prepare the cream sauce: Spray a heavy frying pan with

oil. Saute the onion over medium-high heat until translucent. Reduce the heat

to low.

 

Place the garlic in a food processor with the S blade inserted. Mince. Add the

parsley, soup stock, pepper, soy milk, and tofu. Process until smooth. Add to

the onion. Heat without boiling. Stir in the potatoes. Serve.
