Asparagus with Lemon-Garlic Sauce

3 garlic cloves -- quartered

9 1/2 ounces silken tofu

3 tablespoons lemon juice

1/2 cup chopped scallions

salt

1 pound fresh asparagus

 

Place the garlic in a food processor with the S blade inserted. Mince. Add the

tofu, lemon juice, and scallions. Process until smooth. Salt to taste. Taste

again. If needed, add more lemon juice.

 

Steam the asparagus for 3 to 5 minutes, just until bright green. Place on a

serving plate. Spoon the lemon sauce over the asparagus. Serve.
