This is a headstart on next week's cookbook theme. I really enjoy Cookin' Southern Vegetarian Style, and urge you to read Ann Jackson's entertaining comments. Ellen * Exported from MasterCook Mac * Smoky Mountain Salted Nuts Recipe By : Cookin' Southern Vegetarian Style, Ann Jackson p121 Serving Size : 1 Preparation Time :0:00 Categories : Appetizers & Snacks Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 cup soy margarine 1 tablespoon salt 1 pound pecans - Choose one (optional): - 1 1/2 tsp cumin - 1/4 tsp cayenne pepper - 2 tblsp sugar Yield: about 5 cups Preheat the oven to 200F. Melt the margarine in a large skillet. Add the salt, pecans, and one of the optional flavorings, and stir well, then remove from the heat. Put the pecans in a rectangular baking dish, and bake for 1 hour. Be sure to stir every 15 minutes. When your house smells good enough to eat, the pecans are done. Remove from the oven and drain on paper towels. Nothing on earth tastes as good or smells as good while cooking as roasted pecans. If you are wondering about nice homemade Christmas gifts, these pecans are perfect.
