Spinach-Sesame Salad

4 ounces extra-firm tofu

2 garlic cloves -- pressed

1 teaspoon tamari soy sauce

10 ounces fresh spinach -- steamed

1 teaspoon rice vinegar

2 tablespoons high-lignan flax oil

2 tablespoons sesame seeds

 

Place the tofu, garlic, and tamari in a medium-size bowl. Mash together with a

fork, combining thoroughly.

 

Add the spinach. Toss until the tofu mixture is thoroughly combined with the

spinach. Add the vinegar and toss. Add the oil and toss. Add the sesame seeds

and toss.
