Guest guest Posted November 13, 2000 Report Share Posted November 13, 2000 * Exported from MasterCook * Spice Pound Cake Recipe By : Serving Size : 18 Preparation Time :0:00 Categories : April '00 Desserts Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- Cooking spray 3 tablespoons dry breadcrumbs 3 cups all-purpose flour 2 teaspoons ground cinnamon 1 teaspoon baking powder 1 teaspoon ground ginger 1/2 teaspoon grated whole nutmeg 1/2 teaspoon ground allspice 1/4 teaspoon salt 10 tablespoons butter or stick margarine -- softened 1 1/3 cups granulated sugar 1 cup packed brown sugar 2 teaspoons vanilla extract 3 large eggs 1 cup fat-free milk 1 tablespoon powdered sugar Preheat oven to 350º. Coat a 10-inch tube pan with cooking spray; dust with breadcrumbs. Lightly spoon flour into dry measuring cups; level with a knife. Combine flour and the next 6 ingredients (flour through salt) in a bowl; stir well with a whisk. Beat the butter in a large bowl at medium speed of a mixer until light and fluffy. Gradually add the granulated and brown sugars and vanilla, beating until well-blended. Add the eggs, 1 at a time, beating well after each addition. Add flour mixture to sugar mixture alternately with milk, beating at low speed, beginning and ending with flour mixture. Spoon batter into prepared pan. Bake at 350º for 1 hour and 5 minutes or until a wooden pick inserted in center comes out clean. Cool in pan 10 minutes on a wire rack; remove from pan. Cool completely on wire rack. Sift powdered sugar over top of cake.
