Tomatoes with Fresh Basil Marinade

3 tomatoes -- sliced

1 small onion -- chopped fine

1 garlic clove -- minced

2 tablespoons chopped fresh basil

1 tablespoon balsamic vinegar

2 tablespoons high-lignan flax oil

4 ounces extra-firm tofu

salt

 

Arrange the sliced tomatoes in concentric circles on a dinner plate.

 

Place the onion, garlic, basil, vinegar, oil, and tofu in a small mixing bowl.

Mash with a fork or potato masher until thoroughly combined. Salt to taste.

Spoon over the tomatoes.
