I've included my own recipe for nut burgers (the second recipe which follows) which are outrageously good but not so low in fat. Still, I think most kids would definitely enjoy them. And I've always wanted to try these broccoli burgers so let me know if you try them and like them. * Exported from MasterCook II * Rhonda's Broccoli Burgers Recipe By : Sunset Serving Size : 4 Preparation Time :0:00 Categories : Burgers Sandwiches Vegetarian Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 large eggs 1 3/4 cups chopped broccoli 1/2 cup chopped toasted almonds 3/4 cup chopped red onion 1/2 cup seasoned bread crumbs 1/4 cup water Salt and pepper Toasted buns or bread Mayonnaise and lettuce In a bowl, beat eggs to blend. Stir in broccoli, almonds, onion, bread crumbs, and water. Add salt and pepper to taste. On an oiled 12 by 15-inch baking sheet, shape mixture into 4 patties, each 3/4-inch thick. Bake in a 375 oven, turning halfway through cooking, until each side is golden on bottom, about 25 minutes total. Serve on buns with mayonnaise and lettuce. Makes 4. - - - - - - - - - - - - - - - - - - * Exported from MasterCook II * Nan's Nut Burgers Recipe By : Nanette Blanchard Serving Size : 4 Preparation Time :0:00 Categories : Burgers Sandwiches Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 eggs 3 tablespoons water 1/2 cup ground pecans or walnuts 1/2 cup quick-cooking oats 3/4 cup fresh breadcrumbs from 1 1/2 slices bread 1/2 teaspoon salt 1/4 teaspoon ground sage or savory 1/2 cup finely minced onion 2 cloves garlic -- minced 2 tablespoons canola oil In a bowl, beat eggs with water. Add nuts, oats, breadcrumbs, salt, savory, onion and garlic and mix well. Heat nonstick skillet over medium high heat and add oil. Shape mixture into 4-6 small patties or about a dozen meatballs and add to skillet. Let brown for 3-4 minutes on one side, then turn and brown another 3 minutes on second side. These patties are best if they are well browned. Add 1/2 cup water to skillet, cover, and reduce heat to low. Cook patties until all water is evaporated. Serve on hamburger buns with all the trimmings, or with mushroom gravy, or with your favorite spaghetti recipe. - - - - - - - - - - - - - - - - - - NOTES : These are really the best homemade veggie burgers I've ever had. You can also use 1 cup of oats and omit the breadcrumbs if you like and play around with the spices. This mixture also works well for meatballs. The best method for making good veggie burgers that stay together and have a good texture is to add water to the browned patties and let them steam a bit.
