Hiya ALL!

ok posted a few, now im off to work hope you all enjoy,put changed info

down on bottom so those that are not worried about calories or WW can have

regular!Let me know how you all like!

Greek Spinach, Pasta And Toasted Almonds

Amount Measure Ingredient -- Preparation Method

16 Oz elbow macaroni -- Ziti Or Penne Pasta

8 Oz Mushrooms -- Cleaned & Sliced

1 Tbsp Olive oil

5 C Spinach

Losely Packed Fresh -- cleaned and

- coarsely chopped

2 Garlic Clove -- , Minced

1 C Vegetable Stock

 

Olives (4Oz) -- Pitted,Sliced

- OR

1/4 C Kalamata Olive

- Pitted,Diced

-----GARNISH-----

1/4 C Feta cheese

1/8 C almonds, toasted -- Sliced

 

In a large pot, bring 4 quarts of water to a boil. Add the pasta and

cook according to package directions.

 

Meanwhile, heat a large skillet over medium-high heat. Spray with

nonostick vegetable coating. When the skillet gets very hot, add the

mushrooms, spreading out thinly.

 

Cook for 1-2 minutes to brown. Toss and cook for 2 minutes more. You

want them to brown and not get watery. Turn off the heat and reserve

until the pasta is cooked.

 

When the pasta is al dente, drain in a colander and return to the

cooking pot. Toss with the olive oil. Add the spinach, garlic, stock,

olives, and the mushrooms. Toss well to mix.

 

Place on individual plates or a serving platter and top with feta

cheese and the almonds.

NOTES : original recipe called for penne or ziti, do not have in my

mastercook

Also called for 1/2 cup feta and 1/4 cup almondsstill t up there! not sure

how else to lower other than minus olives, or make it more servings(niccii)

Spanakorizo (Spinach & Rice) (4 Points)

Amount Measure Ingredient -- Preparation Method

-------- ------------ --------------------------------

3 Tbsp Olive Oil

1 Sm Onion -- chopped

1/2 C White Rice -- Raw,Long Grain

1 C tomato paste -- Or Less,To Taste

1/4 C Water -- (Or More)

2 Lb Spinach -- Freshwashed,Trimmed

1/4 C Chopped parsley

1 Leek -- chopped

Salt & freshly ground pepper

4 Bunches Green Onion

 

Heat the oil in an enameled pan, then add

the onions and cook until soft and transparent.

Add spianch and cook till wilted then add

the rice and saute for a few minutes, stirring

constantly, then add the tomato paste and water, cover

the pan and simmer cooking until all the liquid has been

absorbed and the rice is tender, not mushy.

Remove from the heat (approximately 10-35 minutes).

season with salt and pepper.

Spinach And Ricotta Quiche (10 Points)

1 Bunch Spinach -- Fresh,Or Fro 10 Oz T

1 C ricotta cheese, part skim milk

grated nutmeg

1 C grated Parmesan cheese

1 C Light Cream

1 C skim milk

2 eggs

salt and pepper to taste

pie crust (9 inch) -- Called For 10 Inch

4 Egg Whites

 

Line a deep 10-inch quiche pan with your favorite rich

tart pastry. ( i put in poie crust to include with recipe to get total

points!)

Wash spinach and cook a few minutes. Squeeze out

all water and chop (approximately 3/4 cup). Combine Ricotta

cheese, nutmeg and 1/2 cup Parmesan cheese. Spread over bottom

of pastry shell. Beat eggs lightly. Combine with cream and

milk. Season with salt and pepper and pour over Ricotta

cheese-spinach mixture. Sprinkle remaining cheese over top.

Bake in 375 degrees oven for 30 minutes until puffed and set. Let

quiche rest 5 to 10 minutes before serving.

NOTES : i changed all ingrediants to light! and 4 eggs to 2 eggs and 4

white!

put pie crust in to get a estimate dtotal of whole thing points wise!

Tortellini Primavera ( 10 Points)

Amount Measure Ingredient -- Preparation Method

-------- ------------ --------------------------------

1 Cup sliced mushrooms

1/2 Cup chopped onion

1 Clove garlic -- minced

2 Tbsp Olive Oil

10 Ounces spinach -- thawed and drained

8 Ounces light cream cheese

1 Medium tomato -- chopped

1/4 Cup skim milk

1/4 Cup grated parmesan cheese

1 Teaspoon italian seasoning

1/4 Teaspoon salt

1/4 Teaspoon pepper

9 Ounces cheese tortellini -- cooked and drained

 

Cook and stir mushrooms, onion, and garlic in margarine in large

skillet. Add remaining ingredients except tortellini; mix well. Cook

until mixture just begins to boil, stirring occasionally. Stir in

tortellini; cook until thoroughly heated.
