Guest guest Posted November 10, 2000 Report Share Posted November 10, 2000 * Exported from MasterCook * Vegetable Cheese Loaf Recipe By : Serving Size : 6 Preparation Time :0:00 Categories : Main Dishes Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 medium eggplant -- (1 pound) thinly sliced 1/2 teaspoon salt 2 tablespoons olive oil 4 cloves garlic -- minced 3 medium zucchini -- (1 pound) thinly sliced 2 large red bell peppers -- (1 pound) quartered 2 large orange or yellow bell peppers -- (1 pound) quartered 2 medium sweet onions -- (1 pound) thinly sliced 1 pound portobello mushrooms -- stems removed 1 1/4 cups shredded Jarlsberg cheese 1 teaspoon dried basil 1/2 teaspoon dried oregano 1/4 teaspoon ground black pepper 1 cup tomato vegetable juice 2 tablespoons all-purpose flour About 30 minutes before starting to prepare loaf, toss sliced eggplant with 1/4 teaspoon salt and place in a colander over a bowl. Set aside to drain. Preheat broiler. Combine oil and garlic. Arrange drained eggplant, the zucchini, peppers, onions, and mushrooms on 2 rimmed baking sheets; brush with garlic oil. Broil one sheet of vegetables, 4 minutes on the first side; turn and broil 3 minutes on the other. Repeat with second sheet of vegetables. Set aside until cool enough to handle. Meanwhile, combine cheese, remaining 1/4 teaspoon salt, oregano, basil, and pepper. Preheat oven to 375 degrees. Thinly slice mushrooms. In an oiled 8-inch springform pan, layer eggplant, zucchini, yellow peppers, onions, mushrooms, and red peppers, sprinkling each layer with a little of the cheese mixture before adding the next. Cover tightly with aluminum foil. Place pan on rimmed baking sheet and bake 35 minutes until bubbly and lightly browned on top. To serve: Remove foil; cut loaf into 6 wedges before removing rim of pan. Place pan on wire rack over a saucepan. Remove rim and release juices into saucepan. Stir water into flour; then stir mixture into drippings in saucepan. Heat to a boil, stirring constantly until thickened; serve with loaf.
