Guest guest Posted November 10, 2000 Report Share Posted November 10, 2000 * Exported from MasterCook * Asparagus Roll-Ups Recipe By : Vegetarian Times Complete Thanksgiving Cookbook, page 56 Serving Size : 16 Preparation Time :0:00 Categories : Appetizers And Snacks Vegetables Vegetarian Times Thanksgiving Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 cup low-fat mayonnaise 1 tablespoon chopped sun-dried tomatoes 3 scallions -- finely chopped (white and green parts) 16 lettuce leaves -- washed and dried 32 large asparagus spears lightly cooked and drained 16 sprigs fresh dill weed Edible flowers for garnish -- (optional) Steamed scallion strips -- (optional) Makes 16 servings. Use soft Iettuces such as butter or red oak for this appetizer or salad. In a small bowl, mix mayonnaise, sun-dried tomatoes and chopped scallions. With a teaspoon, spread a little mixture inside each lettuce leaf. Top with 2 asparagus spears. Add 1 sprig dill weed and 1 edible flower if desired. Roll to form a " bouquet; " tie with scallion strips. Place on a serving platter. Repeat until all ingredients are used. Chill until ready to serve.
