A Pretty Good Pumpkin Cheesecake!

1 1/4 cups gingersnap crumbs -- (25-30 cookies)

3 tablespoons apple juice concentrate

3 8 oz packages fat-free cream cheese

1 1/4 cups sugar

1 tablespoon vanilla

6 egg substitutes

6 egg whites

2 cans pumpkin pie filling -- (16.25-oz.)

 

Combine cookie crumbs and apple juice concentrate. Press into the bottom and one

inch up sides of a 12-inch springform pan coated with Pam or similar baking

spray.

 

In a medium bowl, beat cream cheese with a mixer until smooth. Add one cup sugar

and vanilla, beating until creamy. Stir in four egg substitutes. Pour 2 1/2 cups

mixture into prepared crust.

 

Add pumpkin pie mix and two egg substitutes to remaining cream cheese mixture,

stirring well. Set aside.

 

In a small mixing bowl, beat egg whites at high speed until foamy. Add remaining

1/4 cup sugar, a tablespoon at a time, beating until stiff peaks form and sugar

dissolves. Fold into pumpkin mixture and pour over cream cheese mixture in

crust.

 

Bake at 300ºF for 90 minutes. Turn oven off and gently run a knife around the

edge of pan to release sides. Let stand in oven with door partially open for 90

minutes. Remove sides of pan, cover and chill.

Just a tip I've very fond of:

If you add 1tbl for each 8 oz nonfat cream cheese, the

cheesecake won't crack.
