Thai-Style Noodles

8 ounces linguine

1/2 cup soy nuts

2 garlic cloves -- quartered

2 tablespoons lime juice

1 tablespoon tamari soy sauce

2 tablespoons peanut butter

1/3 cup soy milk

8 ounces soft tofu -- mashed

2 cups mung bean sprouts

3 tablespoons fresh chopped cilantro

 

Bring 2 quarts of water to a boil. Add the linguine and cook for about 10

minutes (or according to package directions).

 

Place the soy nuts in a food processor with the S blade inserted. Process until

the nuts are coarsely choppedd. Pour into a bowl and set aside.

 

Place the garlic in the food processor. Mince. Add the lime juice, tamari,

peanut butter, and soy milk. Process until smooth. Set aside.

 

Drain and rinse the pasta. Place in a bowl. Add the mashed tofu and sprouts.

Mix together. Add the peanut butter-lime sauce. Toss. Add the cilantro and

toss.
