I thought the salad dressings in this cookbook sounded good, so I formated

several of them.

Creamy Italian Dressing

Amount Measure Ingredient -- Preparation Method

1/3 cup nonfat cottage cheese

1/3 cup nonfat plain yogurt

2 tablespoons extra virgin olive oil

2 tablespoons minced onion

1/2 teaspoon minced garlic

1 tablespoon fresh lemon juice

1 tablespoon Dijon mustard

1 teaspoon minced fresh parsley -- (flat-leaf)

1/2 teaspoon dried basil

1/2 teaspoon dried oregano

1/2 teaspoon pepper -- or to taste

 

Process the cottage cheese, yogurt, oil, onion, garlic, lemon juice, and mustard

in a blender until smooth and creamy. Stir in the remaining ingredients.

Adjust seasonings to taste.

 

This dressing will keep for up to 2 days in a tightly closed container in the

refrigerator.
