I usually add a can of small white beans to Gazpacho so that it isn't as

light and has more protein.

Recipe By : 15-Minute Vegetarian Gourmet ('87), Paulette Mitchell, p 48

Serving Size : 4 Preparation Time :0:00

Categories : Soups And Stews Vegetables

Amount Measure Ingredient -- Preparation Method

-------- ------------ --------------------------------

15 ounces canned tomato sauce -- (1 1/2 cups)

2 tablespoons olive oil

2 tablespoons red wine vinegar

1 tablespoon honey

1 medium-size tomato

cut into 1/2-inch cubes

1 medium-size green bell pepper -- chopped

1 small sweet red pepper -- chopped

1 stalk celery -- chopped

1 clove garlic -- finely minced

1 scallion -- chopped

1/2 cucumber -- seeded and chopped

1/2 teaspoon hot pepper sauce

1/2 teaspoon black pepper

***GARNISHES***

Herbed Garlic Croutons

(see separate recipe)

dollop of plain yogurt

topped with finely minced fresh chives

finely shredded lettuce

OR minced fresh parsley -- optional

4 to 6 servings

This delicious and stoveless soup of Spanish origin is a welcome treat

during the hot summer months. If you are planning to serve it immediately,

start with chilled ingredients. Accompany it with a substantial salad such

as the Couscous-Currant Salad with Lemon Dressing (see separate recipe) and

a cheese platter.

ADVANCE PREPARATION: May be made in advance and refrigerated for several

days. I love having it on hand for quick lunches and snacks.

In a medium-size mixing bowl, combine tomato sauce, olive oil, vinegar, and

honey. Stir in remaining ingredients. Serve chilled. Top each serving

with garnish.

• For even quicker Gazpacho, puree leftover mixed green and vegetable

salad, dressing and all, with chilled tomato juice.

VARIATIONS

• add 2 tablespoons chopped fresh mint leaves; omit hot pepper sauce

• for a thinner soup, stir in tomato juice or vegetable cocktail juice to

desired consistency
