Guest guest Posted November 9, 2000 Report Share Posted November 9, 2000 * Exported from MasterCook * Roasted Garlic, White Bean, and Sausage Soup Recipe By :Estrogen, The Natural Way - Nina Shandler Serving Size : 4 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- spray oil 10 soy sausages -- sliced 3 garlic cloves -- quartered 16 ounces soft tofu 2 tablespoons whole roasted garlic cloves 2 tablespoons dark miso 1 15 oz can white or great northern beans -- drained 1 1/2 cups unsweetened soy milk 1/4 cup chopped roasted garlic cloves 1 tablespoon mustard seed pepper Spray a heavy-bottomed soup pot with oil. Saute the sliced sausage over medium-high heat. While the sausage sautes, place the fresh garlic in a food processor with the S blade inserted. Mince. Add the tofu, 2 tablespoons roasted garlic, and miso. Process for 2 minutes, until smooth and silky. Add the tofu mixture, the beans, soy milk, 1/4 cup chopped roasted garlic, and mustard seed to the sausage. Reduce the heat to medium and stir until all of the ingredients are well combined. Cook, stirring occasionally, without bringing to a boil, until heated through. Season with pepper before serving. Description: " Creamy without cream.
