Guest guest Posted November 8, 2000 Report Share Posted November 8, 2000 xpost: veg, allcookbook * Exported from MasterCook * Eggless Egg Salad Recipe By : " The New Enchanted Broccoli Forest, " Mollie Katzen Serving Size : 6 Preparation Time :0:00 Categories : New Import Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3/4 pound tofu -- very firm 3 green onion -- minced 1 medium grated carrot 1 medium celery rib -- finely minced 1/2 small bell pepper -- finely minced 1/4 cup toasted sunflower seeds 1 batch tofu mayonnaise (see recipe) 1/2 teaspoon salt -- or more to taste fresh black pepper to taste greens -- olives, tomatoes and vegetable garnishes (optional) pita bread -- (optional) Cut the tofu into small dice and place in a medium bowl. Add green onion, carrot, celery, bell pepper, sunflower seeds and Tofu Mayonnaise and mix gently. Season with salt and pepper. Cover tightly and chill until cold. Serve on a bed of greens with olives, tomatoes and vegetable garnishes or in a sandwich made with pita bread.
