Basil-Bean Salad

Amount Measure Ingredient -- Preparation Method

1 15 oz can Great Northern beans -- rinsed & drained

1 cucumber -- coarsely chopped

1 red bell pepper -- coarsely chopped

1/4 cup finely chopped red onion

DRESSING:

2 tablespoons canola oil -- or safflower oil

2 tablespoons cider vinegar

1 tablespoon fresh lemon juice

2 tablespoons minced fresh basil -- (or 2 tsp dried)

1 tablespoon minced fresh parsley -- (flat-leaf)

1/4 teaspoon pepper -- or to taste

OPTIONAL GARNISH: coarsely chopped

scallions

 

Toss together the salad ingredients in a medium bowl.

 

Whisk together the dressing ingredients in a small bowl. Adjust the seasonings

to taste. Add to the bean mixture and toss. Strain the salad with a slotted

spoon for serving.

 

This salad will keep for up to 4 days in a covered container in the

refrigerator.
