Guest guest Posted November 8, 2000 Report Share Posted November 8, 2000 * Exported from MasterCook * Orange-Poppy Seed Muffins Recipe By :Estrogen, The Natural Way - Nina Shandler Serving Size : 0 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 1/4 cups unbleached white flour 3 tablespoons soy flour 1/4 cup poppy seeds 1 tablespoon baking soda 1 tablespoon grated orange rind 1 1/2 cups soy milk 1/2 cup frozen orange juice concentrate 1/4 cup all-fruit orange marmalade 1/3 cup flax seed Preheat the oven to 325F. Place alll of the dry ingredients, including the orange rind, in a medium-size mixing bowl. Stir with a wire whisk until completely combined. Place the soy milk, orange juice concentrate, orange marmalde, and flaxseed in an electric blender. Blend until the flaxseeds begin to disintegrate and the mixture bubbles. Pour into the dry ingredients. Stir to form a batter. Spoon into 8 nonstick or oiled large muffin tins. Bake for 50 minutes, until lightly browned.
