Guest guest Posted November 8, 2000 Report Share Posted November 8, 2000 * Exported from MasterCook * Spinach-and-Bacin Omelet Recipe By :Estrogen, The Natural Way - Nina Shandler Serving Size : 0 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- Omelet 1 garlic clove -- quartered 8 ounces firm tofu 1/8 teaspoon turmeric 1 teaspoon Dijon mustard salt Filling spray oil 1 garlic clove -- minced 1/2 onion -- chopped 6 ounces fresh spinach 1 tablespoon bacin bits Preheat the oven to 500F. Place all of the omelet ingredients in a food processor with the S blade inserted and blend until smooth. Pour the mixture into the center of a 9-inch nonstick cake pan. Using the back of a soup spoon, carefully spread the tofu mixture, making expanding circles and gradually moving the mixture toward the edge of the pan. Bake for 12 minutes, until the underside of the omelet is lightly browned and the top has gelled. While the omelet bakes, prepare the filling: Spray a frying pan with oil and place over medium-high heat. Saute the garlic and onion until brown. Add the spinach. Cook until limp. Stir in the bacin bits. Remove the omelet from the oven. Fold in half. Move it to a serving plate. Unfold. Spoon the fiillng over half the omelet. Fold the other half over the filling. Serve. Description: " The bacin bits are little bits of soy protein colored with beets. They can be found in the spice section of most natural foods stores and in many supermarkets.
