Artichoke Dip

3 garlic cloves -- quartered

3 tablespoons lemon juice

8 ounces soft tofu

1 tablespoon tamari soy sauce

1 8 1/2 oz can artichoke hearts, packed in water -- drained

2 tablespoons small capers

 

Place the garlic in a food processor with the S blade inserted. Mince. Add the

lemon juice, tofu, and tamari. Process until smooth. Add the artichokes.

Process repeatedly, using the pulse setting, until the artichokes are finely

chopped but not pureed. Turn into a bowl. Stir in the capers. Serve.

" A fun snack or an elegant appetizer, this dip goes especially well

with whole-grain crackers. "
