Banana Buttermilk Buckwheat Pancakes

Amount Measure Ingredient -- Preparation Method

1 cup all-purpose flour

1/2 cup whole-wheat flour

1/2 cup buckwheat flour

2 tablespoons sugar

1 teaspoon salt

1 teaspoon baking soda

4 teaspoons baking powder

2 eggs -- lightly beaten

4 tablespoons melted butter

1 1/2 cups buttermilk

1/2 cup milk

2 ripe mashed bananas

 

In a large bowl, combine flours, sugar, salt, baking soda and baking

powder. In another bowl, combine remaining ingredients.

 

Add liquid mixture to the dry ingredients, stirring well. Drop by 1/3

cupfuls onto a 350-degree griddle. 4 to 6 servings
