Veggie Scramble

Amount Measure Ingredient -- Preparation Method

spray oil

1 garlic clove -- minced

1/2 small onion -- chopped

1/4 cup chopped mushrooms

1/4 cup chopped broccoli

1/4 cup chopped green or red bell pepper

1/2 cake silken, soft, or firm tofu

1/8 teaspoon turmeric

salt and pepper

 

Spray a heavy frying pan with oil and place over medium-high heat. Saute the

garlic, onion, and mushrooms. Add the broccoli. When the broccoli can be

pierced with a fork, add the bell pepper.

 

Mash the tofu with a fork or potato masher. Mash in the turmeric. Sprinkle

lightly with salt and pepper. Add the tofu to the vegetables. Cook, stirring

occasionally, just until heated. Serve.
