Guest guest Posted November 7, 2000 Report Share Posted November 7, 2000 * Exported from MasterCook * Sweet and Sour Tofu Recipe By :Paulette Mitchell Serving Size : 0 Preparation Time :0:00 Categories : Entrees Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3 cups hot cooked brown rice -- to 4 cups Sweet and Sour Sauce -- Makes 1 3/4 cups 1 cup pineapple juice 1/3 cup rice vinegar 2 tablespoons soy sauce 2 tablespoons cornstarch 3 tablespoons tomato paste 2 tablespoons honey 1 tablespoon minced gingerroot dash of white pepper Tofu 2 tablespoons safflower oil 2 medium-size carrots -- thinly sliced 1 medium-size sweet red pepper -- sliced 1 medium-size green bell pepper -- sliced 1 medium-size onion -- sliced 1 clove garlic -- minced 3/4 pound firm tofu -- cut into 1/2 " cubes 1 large tomato -- cut into wedges 1 8-ounce can (1 cup) pineapple chunks or tidbits in own juice -- drained 2 tablespoons toasted sesame seeds Garnish: scallion curls, chopped raw cashews, chopped peanuts, or sprig of fresh coriander -- optional Cook or reheat rice. In a small bowl, whisk together pineapple juice, vinegar, and soy sauce. Add cornstarch, stirring until smooth. Stir in remaining sauce ingredients. Set aside. In a large skillet or wok, heat safflower oil on high. Sauté carrots, peppers, onion, and garlic until carrot is crisp-tender, about 5 minutes. Stir sauce, pour over vegetables, stirring until sauce thickens. Gently fold in remaining ingredients. Heat through. Serve on hot rice. Top with garnish. Variations: Add sliced mushrooms; sauté with other mushrooms. If time permits, slice tofu into strips 1 x 2 x 1/4 inch; before adding, sauté until lightly browned and slightly crispy. Or follow the procedure for Batter-Dipped Tofu. Description: " Colorful and loaded with Chinese flavor, this dish is a meal in itself with rice. For variety, serve it over couscous or pasta such as buckwheat noodles. Hints: Tofu is low in calories, rich in calcium and iron, and cholesterol-free. Be certain to check the freshness dates on tofu packages. Fresh tofu is always the best. When you bring tofu home from the store, rinse and drain it, refrigerate in fresh water. If the water is changed daily, the tofu will remain fresh for 7 to 10 days. Tomato paste is available in tubes at many groceries and specialty stores. It is ideal for recipes calling for less than a 6-ounce can. Nutr.
