Guest guest Posted November 7, 2000 Report Share Posted November 7, 2000 * Exported from MasterCook * French Potato Salad with Savory Vinaigrette Recipe By :Paulette Mitchell Serving Size : 4 Preparation Time :0:00 Categories : Salads Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- Salad 1 1/2 pounds new potatoes -- (about 12) 1 bay leaf 2 tablespoons chopped onion Savory Vegetables 2 tablespoons safflower oil or olive oil 2 tablespoons white wine vinegar 1 tablespoon chopped fresh parsley 1 clove garlic -- finely minced 1 teaspoon summer savory 1/2 teaspoon black pepper 1/4 teaspoon dry mustard Garnish: cherry tomato slices, or grated Cheddar cheese mixed with chopped fresh parsley -- optional Fill half a large pot with water; over high heat, bring to a boil. Meanwhile, scrub potatoes and cut into large cubes or thick slices. Add to water with bay leaf, onion, and pepper. Simmer potatoes until just tender, about 8 minutes. Remove bay leaf and drain. While potatoes are cooking, mix together dressing ingredients. In a large bowl, toss dressing with warm potatoes. Top with garnish and serve immediately. 4 to 6 servings. Variations: Add other vegetables such as grated carrots or steamed cut green beans. Place in an oven-proof bowl, top with grated Cheddar cheese, and broil until cheese is melted. To serve chilled, prepare earlier in the day and refrigerate. Hints: When boiling potatoes, cut into cubes of uniform size so they will cook at the same rate. It is not necessary to peel potatoes for potato salad; potatoes eaten with their skins have more nutrients. Scrub them well before cooking; many potatoes are sprayed with chemicals to keep their " eyes " from sprouting. Nutr.
