Silken Brocolii Soup

4 cups broccoli flowerets

1 tablespoon unsalted butter

1 tablespoon flour

3 cups lowfat 2% milk -- warmed

2/3 cup Cheddar cheese -- shredded

1 dash nutmeg

salt and pepper

 

Clean and steam the vegetables until soft, about 7 minutes. Puree

the vegetable in a food processor and set aside.

 

Melt the butter in a large saucepan. Stir in the flour and cook,

stirring over medium-low heat until it is golden, about 2 minutes.

Add the warm milk the milk, stirring constantly until it thickens (

just before boiling )--about 10 minutes. Add the vegetable puree.

 

Stir in the cheese and keep stirring unti it melts and the mixture is

very smooth. Add the paprika or nutmeg, season with salt and pepper

and serve immediately.

NOTES : Could be made with Cauliflower instead, just substitute

Cauliflower for brocolii and for paprika for nutmeg.

Also could be made with spinach, but steam spinach only for 3

minutes, do not change the spices.
