Guest guest Posted November 6, 2000 Report Share Posted November 6, 2000 * Exported from MasterCook * Silken Brocolii Soup Recipe By :Almost Vegetarian Serving Size : 4 Preparation Time :0:00 Categories : Soups Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 cups broccoli flowerets 1 tablespoon unsalted butter 1 tablespoon flour 3 cups lowfat 2% milk -- warmed 2/3 cup Cheddar cheese -- shredded 1 dash nutmeg salt and pepper Clean and steam the vegetables until soft, about 7 minutes. Puree the vegetable in a food processor and set aside. Melt the butter in a large saucepan. Stir in the flour and cook, stirring over medium-low heat until it is golden, about 2 minutes. Add the warm milk the milk, stirring constantly until it thickens ( just before boiling )--about 10 minutes. Add the vegetable puree. Stir in the cheese and keep stirring unti it melts and the mixture is very smooth.
