Grilled Potato Wedges

3 1/2 pounds medium red potatoes -- , up to 4

cut into 3/4-inch-thick wedges

1/4 cup olive oil

plus more as needed

2 tablespoons minced garlic

2 tablespoons chopped fresh rosemary

Salt and pepper -- to taste

 

Serves 6

 

These tender, moist potatoes with golden brown crusts are best prepared

over a gas grill, but any lidded grill will work. Preheat gas grill on

high. In a large vegetable steamer, bring 1 inch of water to a

boil. Place potatoes in steamer, cover and cook until they yield slightly

to a sharp fork (about 10 minutes). Cool slightly under running

water. Pat potatoes dry with paper towel; coat potatoes with oil, garlic,

rosemary, salt and pepper. Place on preheated gas grill; immediately turn

burners to low. Close lid and grill until tender (about 45 minutes),

turning potatoes several times during cooking and basting with more oil, if

needed. Serve hot.
