Couscous and Vegetable Salad

 

Recipe By :Weight Watchers Magazine, November/December 2000

2 tablespoons chopped sun-dried tomatoes -- (water packed)

2 tablespoons hot water

1 cup cooked couscous

1/4 cup diced cucumber

1/4 cup diced red bell pepper

1/4 cup canned artichoke heart -- chopped and drained

2 tablespoons chopped fresh parsley

1 teaspoon olive oil

 

Combine sun-dried tomatoes with hot water and let stand 10 minutes. Combine

couscous, cucumber, red bell pepper, artichoke hearts,

sun-dried tomatoes, parsley, and olive oil. Toss and serve on a bed of baby

lettuce.
