Rice With Squash And Vegetarian Chorizo

Amount Measure Ingredient -- Preparation Method

1 tablespoon olive oil

1 medium white onion -- diced

2 cups diced summer squash (yellow and/or green)

2 cloves garlic -- minced

1 teaspoon dried oregano

1/4 teaspoon salt

4 cups cooked brown rice

1 1/2 cups Vegetarian Chorizo

1/2 cup minced fresh cilantro

 

Heat oil in a large skillet over medium-high heat and saute onion, stirring

frequently, until beginning to brown, about 3 minutes.

 

Add squash, garlic, oregano, and salt. Saute, stirring frequently, for 10

minutes.

 

Pour in 1/4 cup water, immediately cover pan, and turn off heat. Allow to sit

for 2 minutes, then stir in rice, chorizo, and cilantro until well combined.

Serve immediately.
